    Smoked roe-deer tartare with yellow beetroot, goat cheese, rosemary foam and red wine gel

  • Hot starter

    Wolfish cheeks with spinach, Jerusalem artichokes and fennel oil in broth with spicy salami

  • Main course I

    Catfish mousse with snails and bell pepper, roasted parsnip and sea buckthorn

  • Main course II

    Pigeon on burnt cabbage puree, barley crisps, pumpkin and fig in red Porto wine sauce

  • Dessert

    Passion fruit mousse in brick pastry with blackberry, tonka beans and milk powder
